两百多的烤箱也可以烤戚风
答主18年的时候在京东买了一款美的的烤箱,38L比较大(现在价位240左右)。

当时烘焙圈还没有很内卷,不像现在一推荐就是几千的烤箱。于是答主作为烘焙区新手小白,就这么愉快的踏上了烘焙之路。
一开始,烤糊过面包,几乎所有蛋糕都没烤透过-.-。只能低温烤点蛋白糖。那时候完全不懂一些专业术语,全凭一腔热血,翻车了一年后,在给儿子烤生日蛋糕的时候突然就开窍了,19年的时候终于烤出来成功的戚风蛋糕了。

总结下来就是:
因为烤箱便宜(平炉烤箱)温度不算太均匀,所以烤箱预热时间一定要足够,建议买个烤箱温度计,随时监控温度。我一般是从分蛋清蛋黄开始预热。

2. 要准备无水无油的打蛋盆,分离蛋清时里面不能有蛋黄,一定要用冷藏的鸡蛋,不要用常温的;如果是常温的,分离蛋黄蛋白之后,要冷冻蛋白至周围有一圈冰渣,再打发。
3. 蛋白要打发至硬性发泡,打发的时候,先高速打发,再低速打发整理,最后蛋白有光泽度有立体感,倒扣不滑落,拉起打蛋器有直立的小尖角为打发成功。

4. 搅拌蛋白霜与蛋黄糊的时候,一定要轻柔的切拌,像炒菜一样抄底切拌,以免消泡。(答主手里买过硬硅胶刮刀与软硅胶刮刀,切拌的时候选择软刮刀)。
5. 搅拌好的蛋糕糊,倒入模具的时候,尽量不要装太满,如果鸡蛋比较大,装进去差不多就满了(所以一般选择带壳50g左右的鸡蛋),烤的时候蛋糕糊膨胀升起,抓不到模具壁就会形成蘑菇顶。多的蛋糕糊,可以装入纸杯里烤成杯子蛋糕。
6. 然后预热好的烤箱差不多150度(烤箱温度计显示),放入模具进行烘烤,中途尽量不要打开烤箱,会造成戚风的回缩。
如果以上六点做好了,你的戚风蛋糕就基本成功啦。答主差不多失败了几十次吧,总算是摸索出套路来了。所以烤箱价格不是重点,重点是温度的把控啦~多烤就能知道自己烤箱的脾气,戚风总算不会把人气疯了。
